Mayonaise Sauce:
1/2 Cup mayonaise
2 Tablespoons Chipotle Chilles ( you can buy in a can in the mexican isle) NOTE: use one tablespoon and try the sauce before you add the second cause you may need a fire dept to put out the flames. blend in blender to make a paste.
2 Tablespoons of vinegar
1 Garlic clove (finely chopped)


The Sandwich!
1 lb of deer steak or (thinly sliced stew meat) slice meat up thing and small pieces.
1/2 Cup chopped up sweet onions
garlic salt, pepper to taste
Bacon Grease to saute meat and onions in.

The Bread of the Sandwich!
two French Rolls Cut into 3 even sections
Slices of Mild Cheddar Cheese (12) approx depending on how much cheese you like
2 tomatoes sliced
1 onion sliced
1/2 head of lettuce shredded (I like small slivers of lettuce instead of hunks)
2 Avacados thinly sliced, (I use avacado dip, since it is hard to find good avacados out here)

To make the mayonaise sauce, mix together mayonnaise chipotle paste, vinegar and garlic. Set aside. Pre heat oven to 350 degrees F. Season meat with garlic salt and pepper; cook to desired doneness on a grill or in a frying pan with a little bacon grease. Slice each french roll section in half horizontally and spread mayo sauce on both halves. Place french roll on cookie sheet and heat in oven until crisp. Remove from oven and add two slices of cheese to half of each roll. Place deer meat on top of cheese. Add tomatoes, onion and lettuce, place avacado slices on the other half of earch roll. close halves and serve..

This sandwich will be the hit of any get together!
